Protein Packed Spinach Salad! Sneak Peak Recipe From 21 Day July Fat Blast Challenge

SPINACH SALAD WITH QUINOA, CHICKEN, AVOCADO, ROASTED VEGGIES & GOAT CHEESE

This recipe can also be made vegan if you take out the chicken and goat cheese — the 21 Day Challenge meal plan offers vegan options for all meals and snacks.

Makes 2 Servings

 

Ingredients:

-1/2 cup quinoa, cooked according to package directions, warm or room-temperature
-4 cups of spinach and/or mixed greens
-1 avocado, diced
-2 grilled chicken breasts, diced and warm or room temperature
-1/2 zucchini, chopped
-1/4 onion, sliced
-1/2 cup cherry or grape tomatoes
-2-3 tbsp olive oil, split
-1-2 tbsp plain Greek yogurt
-1 tbsp apple cider vinegar or champagne vinegar
-1 tbsp honey
-1 tsp dijon mustard
-2 tbsp crumbled goat cheese (optional) or feta is fine also

 

Directions
-Heat olive oil in a saute pan over medium heat. Add the zucchini, tomatoes, and onions. Saute until soft, about 5 minutes. Remove from heat and bring to room temperature.
-For dressing, whisk together 1 – 2 tbsp olive oil, yogurt, vinegar, honey, and mustard.
-Mix together all ingredients. Toss with dressing. If desired, top with crumbled goat cheese and course ground black pepper. Serve immediately.
